Celebrating Our Family Heritage with Nestle Lean Cuisine Italian Meals #FrozenFavorites #cbias

My daughter had a project to learn about her family heritage. She is very interested in learning about both sides of the family. From my husband's side she is mostly Italian, and from my side she is mostly Estonian. For her family crest she researched the flags for each country and made them out of felt to put on her crest. She told us she wants to learn more about each culture, so we told her we would have an Italian dinner and an Estonian dinner to celebrate our heritage.
Family Crest My son and I thought it might be fun to start the celebration this weekend with an Italian Night surprise for her! We headed to Sam's Club to see what we could find while she was in school. After searching through multiple options, we decided on the Lean Cuisine Italian 4-pack! It had Spaghetti and Meatballs that the kids would like and Chicken Parmesan for the adults. Part of my New Year's resolutions are to eat healthier and these are 300 calories or less per package! That is great! And for the new price of $6.98 for a 4-pack you can't resist! Great price and great quality food!

We also decided on a healthy dessert of Skinny Cow ice cream sandwiches since my daughter loves Cookies 'n Cream ice cream, and I also grabbed an Asian 6-pack of Lean Cuisine meals. They are my favorite frozen meals for quick lunches and dinner, so I grab them when I can. You probably remember the post where we ate the Asian meals and decorated with things I brought back from my trip to Japan. The kids had a blast preparing that dinner with me. I love to pick up these meals to have in our freezer for healthy food options. We are so busy with school, gymnastics, and I just started working full time hours (40 hours a week), so we need those quick, easy, and healthy choices for meals. Skinny Cow and Lean CuisineFor the surprise dinner, we decided to make the Lean Cuisine Italian meals and include a homemade Italian side dish to go with it. Of course I asked my husband what would go best with these meals, and he helped me create a Garlic Garbanzo Salad as a nice, light, and healthy side. Our theme of the meal besides Italian is "Healthy Eating!" With the salad, dinner, and dessert, my entire meal came to 570 calories, which is awesome! Garlic Garbanzo Salad

A light and healthy side dish to accompany an Italian meal.
Ingredients
  • 2 - 15½ oz. cans of Garbanzo Beans
  • 1 - Small Red Onion
  • 1 - Small Red Pepper
  • 2 - Small Cloves of Garlic
  • 1 - Lemon
  • 2 Tbs. Olive Oil
  • 2 Tbs. Balsamic Vinegar
  • Salt and Pepper to Taste
Instructions
  1. Finely dice red onion and red pepper, and set to the side
  2. Finely dice garlic, add olive oil, and saute in saucepan over medium low heat until lightly browned (about 3 min)
  3. Open, drain, and rinse Garbanzo beans using a strainer
  4. Mix onion, peppers, garlic w/ oil and beans in a large bowl
  5. Squeeze lemon on top
  6. Add in 2 tablespoons of Balsamic Vinegar
  7. Salt and Pepper to taste
  8. Serve

Garlic Garbanzo Salad

The entire meal was delicious, healthy, and we spent some quality family time talking about Italy. My husband was telling my daughter about why the foods we chose were important in Italian culture, and he even tried to speak with some Italian flare as his grandparents sounded. She thought that was cool and wished we had Italian accents. My husband and I have been to Italy together twice. We hope to take the kids there one day! We would love to show them around the sites and see the way the Italians live. Our favorite part was that they seemed to shop daily for fresh foods and ingredients at the local markets. They could even walk to the markets from their houses. We loved that! 

Here you can see our plated dinner. The kids enjoyed the Spaghetti and Meatballs and we had the Chicken Parmesan with our side Garlic Garbanzo Salad. For dessert we had the Skinny Cow ice cream! YUM! And like I said, our meal total was 570 calories! You can’t beat that!

So now we’ve learned a little about Italian cuisine with yummy Lean Cuisine Italian meals, and next  we’ll have to see what to get for an Estonian meal for my daughter. I will need to dig up my grandmother’s recipes.

If my family asks, I have never had Skinny Cow (I hide it from them so I do not have to share, I figure I am entitled to one thing all my own, lol).   27. When we were growing up, my sister decided for International Day to bring in lasagna, for her native dish. Except that we’re Irish and Polish. She just didn’t want to make either of those types of dishes. Denying your heritage for better food – sometimes it must be done!
